The Most Common Coffee Brewing Mistakes at Home and How to Avoid Them

Many people complain that the coffee they make at home doesn’t taste as good as the coffee they get outside, even when the beans themselves are excellent. The problem is often not the type of coffee, but small preparation details that we repeat without noticing. Fixing these mistakes can make a noticeable difference from the very first cup.

Using the Wrong Grind Size

Every brewing method requires a different grind size.

Cezve and Turkish coffee require a very fine, powder-like grind. French press requires a relatively coarse grind so the coffee filters properly without leaving too much sediment in the cup. Pour-over and other filter methods generally require a medium grind.

Using the wrong grind size is one of the most common reasons coffee ends up tasting either too bitter or too weak and watery.

Water Temperature

Fully boiling water at 100°C can lead to excessive bitterness, especially with methods such as French press or pour-over.

It’s better to let the water cool slightly after boiling — around one minute — before pouring it over the coffee. This helps extract the flavors without over-extracting the coffee.

Coffee-to-Water Ratio

Adding coffee “by eye” can produce different results every time. If you want to keep your cups consistent, try using a fixed measurement — whether with a spoon or a scale — instead of guessing the amount each time.

You’ll notice that the flavor becomes more consistent and closer to what you enjoy.

Stale Coffee and Dirty Equipment

Coffee that was ground a long time ago or stored incorrectly loses a significant part of its aroma, even if it was originally high-quality. Check out our article on proper coffee storage for more tips.

Also, don’t forget to clean your brewing equipment regularly. Old coffee oils can build up over time and affect the flavor of every new cup you make, even when the coffee itself is perfectly fresh.

One Step at a Time

You don’t have to fix everything at once.

Try focusing on just one of the points above each time you make coffee — the grind size, water temperature, or coffee-to-water ratio. You’ll notice the difference adding up quickly without having to completely change your routine.
